Chickpea and Couscous Salad

This chickpea and couscous salad is a recipe I learned from my friend Parveen 12 years ago. It's light, refreshing, high in protein, and perfect for meal prep or a quick healthy lunch.

Steps

  1. Wash the couscous and soak in cold water for 1 hour
  2. Peel and chop the cucumber into small pieces
  3. Finely chop 1 cup of onions and ½ cup of tomatoes
  4. Chop 2 cloves of garlic and green chilies (if using) and transfer to a bowl
  5. Add 2 tbsp chopped parsley, 1 tbsp olive oil, 1 tsp pepper powder, 1 tsp salt, and 1 tbsp lemon juice to the bowl and mix well
  6. In a large bowl, combine the drained chickpeas, soaked couscous, chopped onion, tomato, and cucumber
  7. Pour the dressing over the salad and mix gently
  8. Top with craisins and chopped almonds before serving
