Chickpea and Couscous Salad
This chickpea and couscous salad is a recipe I learned from my friend Parveen 12 years ago. It's light, refreshing, high in protein, and perfect for meal prep or a quick healthy lunch.
Steps
- Wash the couscous and soak in cold water for 1 hour
- Peel and chop the cucumber into small pieces
- Finely chop 1 cup of onions and ½ cup of tomatoes
- Chop 2 cloves of garlic and green chilies (if using) and transfer to a bowl
- Add 2 tbsp chopped parsley, 1 tbsp olive oil, 1 tsp pepper powder, 1 tsp salt, and 1 tbsp lemon juice to the bowl and mix well
- In a large bowl, combine the drained chickpeas, soaked couscous, chopped onion, tomato, and cucumber
- Pour the dressing over the salad and mix gently
- Top with craisins and chopped almonds before serving
