High Protein Chickpea Egg Sandwich

Steps
- Mash the cooked chickpeas in a bowl
- Add pepper, chili flakes, and Italian seasoning to the mashed chickpeas
- Add finely chopped onions, cucumber, tomatoes, and avocado
- Squeeze in fresh lemon juice
- Add parsley, mayo, and ranch and mix well
- Add salt and chopped boiled eggs and mix everything together
- Heat a pan and drizzle a little olive oil
- Toast the bread slices on both sides until golden and crisp
- Place cheese on each slice and let it melt slowly on low heat
- Once cheese is melted, spread the chickpea egg filling evenly on one slice
- Close the sandwich with the other slice
- Press lightly and cut neatly
- Serve warm with a fresh side salad
