High Protein Chickpea Egg Sandwich

Steps

  1. Mash the cooked chickpeas in a bowl
  2. Add pepper, chili flakes, and Italian seasoning to the mashed chickpeas
  3. Add finely chopped onions, cucumber, tomatoes, and avocado
  4. Squeeze in fresh lemon juice
  5. Add parsley, mayo, and ranch and mix well
  6. Add salt and chopped boiled eggs and mix everything together
  7. Heat a pan and drizzle a little olive oil
  8. Toast the bread slices on both sides until golden and crisp
  9. Place cheese on each slice and let it melt slowly on low heat
  10. Once cheese is melted, spread the chickpea egg filling evenly on one slice
  11. Close the sandwich with the other slice
  12. Press lightly and cut neatly
  13. Serve warm with a fresh side salad
