High-Protein Egg Muffins

Steps
- Preheat oven to 350°F
- Chop onion, red bell pepper, green bell pepper, tomato, and spinach
- Beat 5 eggs in a mixing bowl
- Add chopped vegetables, feta cheese, ricotta cheese (if using), black pepper, and oregano to the eggs and mix well
- Grease a muffin tin with oil
