Moong Sprouts Curry with Peanuts and Dill

This protein-packed Moong Sprouts Curry transformed my approach to healthy eating. Made with sprouted moong, boiled peanuts, fresh dill, and creamy coconut milk, it's perfect for weight loss, muscle gain, or simply enjoying wholesome Indian cuisine.

Steps

  1. Heat oil in a pan and add cumin seeds until they splutter
  2. Add chopped onion, garlic, and ginger, and sauté until onions are translucent
  3. Add chopped tomatoes and cook until soft and mushy
  4. Add coriander powder, chilli powder, turmeric powder, and salt, and mix well
  5. Add sprouted moong and boiled peanuts, and stir to combine
  6. Add fresh dill leaves and mix through
  7. Pour in coconut milk and simmer for 10-15 minutes until curry thickens
  8. Add garam masala and stir
  9. Serve hot with roti or rice
