Spicy Schezwan Egg Noodles

Better than takeout! These Spicy Schezwan Egg Noodles are loaded with crunchy veggies, soft scrambled eggs, and bold street-style flavors — perfect for a quick lunch or dinner.

Steps

  1. Cook noodles according to package directions, drain and set aside
  2. Scramble the eggs in a hot pan until soft, remove and set aside
  3. Heat oil in a wok or large pan over high heat
  4. Add crushed garlic and ginger, stir-fry until fragrant
  5. Add sliced onion and stir-fry briefly
  6. Add carrot, green beans, red bell pepper, green bell pepper, and cabbage, stir-fry until crisp-tender
  7. Add cooked noodles to the pan
  8. Add Schezwan sauce, soy sauce, chili oil, pepper powder, and salt, toss everything together
  9. Add scrambled eggs back to the pan and mix well
  10. Garnish with cilantro and serve hot
