Spicy Schezwan Egg Noodles
Better than takeout! These Spicy Schezwan Egg Noodles are loaded with crunchy veggies, soft scrambled eggs, and bold street-style flavors — perfect for a quick lunch or dinner.
Steps
- Cook noodles according to package directions, drain and set aside
- Scramble the eggs in a hot pan until soft, remove and set aside
- Heat oil in a wok or large pan over high heat
- Add crushed garlic and ginger, stir-fry until fragrant
- Add sliced onion and stir-fry briefly
- Add carrot, green beans, red bell pepper, green bell pepper, and cabbage, stir-fry until crisp-tender
- Add cooked noodles to the pan
- Add Schezwan sauce, soy sauce, chili oil, pepper powder, and salt, toss everything together
- Add scrambled eggs back to the pan and mix well
- Garnish with cilantro and serve hot
