Steps

  1. Heat oil in a large pot and add whole garam masala (bay leaf, cinnamon stick, cloves, and green cardamom).
  2. Add finely chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and curry leaves, cook until fragrant.
  4. Add chopped tomatoes and cook until they break down and oil separates.
  5. Add turmeric, cumin powder, coriander powder, chili powder, salt, and pepper, mix well.
  6. Add chicken pieces and coat well with the masala.
  7. Add water as needed, cover and simmer until chicken is cooked through and tender.
  8. Sprinkle garam masala powder and mix.
  9. Garnish with chopped cilantro and serve hot.
