Ugadi Special Non-Veg Menu (Chicken Biryani, Lamb Curry & Chicken Fry)
Celebrate Ugadi with this spectacular non-vegetarian feast featuring three show-stopping dishes. This complete menu brings together aromatic chicken biryani, rich lamb curry, and crispy chicken fry for an unforgettable festive meal.
Steps
- Grind red chilies, garlic, ginger, and peppercorn into a paste
- Marinate 2 lb chicken with the paste, salt, and lemon juice
- Cook basmati rice until partially done and set aside
- Heat oil and butter in a large pot, sauté chopped onion until golden
- Add tomatoes and cook until soft
- Add marinated chicken and cook until tender
- Layer cooked rice over chicken, top with mint and coriander leaves
- Cover and cook on low heat until rice is fully cooked and aromatic
- For lamb curry: heat oil, add cloves, cinnamon, and pepper
- Sauté onion and tomato until soft
- Add lamb, coriander powder, chili powder, turmeric, and salt
- Grind roasted gram and coconut with water, add to lamb
- Simmer until lamb is tender and curry thickens
- For chicken fry: marinate 1 lb chicken with garlic, ginger, green chilies, pepper powder, lemon juice, and salt
- Heat oil in a pan, add sliced onion and sauté
- Add marinated chicken and fry until crispy and cooked through
- Serve all three dishes together as a complete Ugadi special meal
