Fried Egg Sandwich with Spinach and Cheese
This quick and delicious fried egg sandwich combines fluffy eggs with spinach, onions, and melted cheese, all sandwiched between crispy toasted bread. Perfect for busy mornings when you need a filling, flavorful breakfast in just 5 minutes.
Steps
- Chop one cup of onion and transfer to a bowl
- Chop spinach and add to the bowl with onion
- Add green chilies if desired
- Crack 5-6 eggs into the bowl
- Add salt and pepper powder
- Whisk everything together until eggs and vegetables are fully combined
- Heat a pan on medium flame and add a little oil or butter
- Pour the egg mixture into the pan evenly
- Place bread slices directly on top of the eggs
- Let cook for about a minute until the bottom starts setting
- Carefully flip everything over
- Add cheese on top of the eggs
- Fold the bread closed like a sandwich
- Toast both sides until the bread turns golden brown and crispy
- Transfer sandwich to a plate
- Top with tomato slices, lettuce, and avocado if desired
- Drizzle chili oil on top
- Cut the sandwich in half and serve
