Holige (Obbattu)
Holige (also known as Obbattu) is a traditional Karnataka sweet flatbread specially made for Ugadi festival. This hotel-style recipe creates melt-in-your-mouth soft holige with a sweet lentil and jaggery filling.
Steps
- Prepare dough by kneading maida with oil and water
- Cook toor dal until soft
- Mix cooked dal with jaggery, grated coconut, and cardamom powder to make the filling (purana)
- Divide dough into small balls
- Stuff each dough ball with the dal-jaggery filling
- Roll out stuffed balls into thin flatbreads
- Cook on tawa until golden spots appear on both sides
