Mangalore Buns

⏱ Prep 20 min 🔥 Cook 15 min 🍽 Serves — 📅 2026-08-12

Mangalore Buns are a beloved Karnataka snack made with ripe bananas, yogurt, and a hint of cumin. Deep-fried until golden and fluffy, they are crisp on the outside, tender inside, and perfect paired with coconut chutney and tea.

Steps

  1. Mash the ripe bananas thoroughly in a bowl until smooth and free of large chunks.
  2. Add the cumin seeds, sugar, baking soda, salt, and yogurt to the mashed bananas and mix well.
  3. Gradually mix in the all-purpose flour until a soft, slightly sticky dough forms.
  4. Knead gently by hand and add 1 tablespoon of oil to coat the dough.
  5. Cover the dough and let it rest for 6 to 8 hours.
  6. Divide the rested dough into small portions and roll each into a smooth ball.
  7. Lightly dust a work surface with flour and roll each ball out into a slightly thick disc.
  8. Heat oil in a deep pan over medium heat.
  9. Gently slide a rolled disc into the hot oil, lightly pressing the top with a spoon so it puffs up.
  10. Flip and fry until both sides are evenly cooked and golden brown.
  11. Remove with a slotted spoon and drain on paper towels before serving warm.
