Rajma Tacos with Crispy Rotis & Creamy Avocado Sauce
These Indian fusion tacos feature spiced mashed rajma and paneer crisped directly onto rotis and finished with a zesty avocado cream. They are a high-protein vegetarian dinner that comes together in minutes.
Steps
- Heat 1 to 2 tablespoons of oil in a pan and sauté the chopped onion until translucent.
- Add the ginger garlic paste and sauté for 30 seconds until fragrant.
- Add the diced bell peppers, salt, chili powder, coriander powder, garam masala, and black pepper, cooking for about a minute.
- Add the cooked rajma and mash thoroughly in the pan, cooking until the moisture evaporates.
- Stir in the crumbled paneer, chopped cilantro, and lime juice, then remove the filling from the heat.
- Blend the avocado, yogurt or sour cream, cilantro, garlic clove, green chili, lime juice, and salt until smooth to make the sauce.
- Heat a lightly oiled pan, lay down a roti or tortilla, and spread a layer of the rajma filling over it.
- Carefully flip and cook the bean side for 1 to 2 minutes until lightly crisped.
- Assemble the tacos by drizzling with the creamy avocado sauce and topping with lettuce, diced tomatoes, and diced red onion.
