Air Fryer Salmon with Moong Sprouts Khichdi

This balanced, high-protein comfort meal combines crispy air-fried salmon with nutritious moong sprouts khichdi. Light yet satisfying, it's perfect for a wholesome lunch or dinner.

Steps

  1. Season salmon fillet with salt, lemon juice, paprika, pepper powder, cumin powder, coriander powder, and oil, massaging spices on both sides.
  2. Air fry salmon at 320°F for 20 minutes until crispy outside and cooked through.
  3. Heat 2 tbsp oil in a pan, add dried red chilies and cumin seeds.
  4. Add chopped onion and cook for a minute.
  5. Add chopped tomatoes and sauté.
  6. Add soaked toor dal and sauté briefly.
  7. Add 1 cup moong sprouts and sauté for a minute.
  8. Add 1 cup soaked rice and 1 tbsp ginger-garlic paste.
  9. Add turmeric powder, chili flakes, coriander powder, cumin powder, and salt, mixing well.
  10. Add water and bring to a boil, then add one more cup of water.
  11. Close lid and cook in rice mode for 12 minutes until done.
  12. Serve hot khichdi with a spoon of butter, air fried salmon, cucumber slices, and a squeeze of lemon juice.
