Chickpea Avocado Paneer Salad
Day 17 of my 30 Days Healthy Eating series brings you this vibrant chickpea avocado salad that's loaded with plant protein, fiber, and healthy fats. It's colorful, filling, and perfect for meal prep, weight loss, or a light high-protein dinner.
Steps
- Chop cucumber, slice onion, and chop red and orange bell peppers
- Halve cherry tomatoes and cube paneer
- In a blender, combine fresh dill, parsley, orange juice, olive oil, garlic cloves, salt, pepper, and lemon juice to make the dressing
- In a large bowl, combine chickpeas, cucumber, onion, bell peppers, cherry tomatoes, paneer, and avocado
- Pour dill dressing over the salad and toss to combine
- Garnish with feta cheese, chopped almonds, and craisins before serving
