High-Protein Paneer & Plantain Salad
Day 12 of my 30 Days Healthy Series brings you a vibrant, high-protein paneer and plantain salad that's perfect for staying on track with your healthy eating goals. This colorful bowl uses sweet potato and plantain instead of regular potatoes for a nutritious twist.
Steps
- Cut sweet potato, plantain, and paneer into cubes
- Season the cubes with chili powder, salt, black pepper, cumin, and cornstarch
- Add oil and roast in oven or pan until golden and slightly crispy
- For the dip, blend garlic, paneer cubes, red chili, Greek yogurt, pepper, salt, and cumin powder until smooth and creamy
- In a large bowl, combine lettuce, onion, red bell pepper, cherry tomatoes, cucumber, and mandarin orange sections
- Add the roasted paneer, sweet potato, and plantain to the salad
- Top with peanuts for crunch
- Drizzle the creamy garlic chili dip over the salad
