High-Protein Paneer & Plantain Salad

Day 12 of my 30 Days Healthy Series brings you a vibrant, high-protein paneer and plantain salad that's perfect for staying on track with your healthy eating goals. This colorful bowl uses sweet potato and plantain instead of regular potatoes for a nutritious twist.

Steps

  1. Cut sweet potato, plantain, and paneer into cubes
  2. Season the cubes with chili powder, salt, black pepper, cumin, and cornstarch
  3. Add oil and roast in oven or pan until golden and slightly crispy
  4. For the dip, blend garlic, paneer cubes, red chili, Greek yogurt, pepper, salt, and cumin powder until smooth and creamy
  5. In a large bowl, combine lettuce, onion, red bell pepper, cherry tomatoes, cucumber, and mandarin orange sections
  6. Add the roasted paneer, sweet potato, and plantain to the salad
  7. Top with peanuts for crunch
  8. Drizzle the creamy garlic chili dip over the salad
