High-Protein Spinach Dal with Egg Roast
Day 6 of the 30 Days Healthy & High-Protein Recipe Series brings you a nutritious and flavorful meal combining protein-rich lentils with eggs. This spinach dal with egg roast is perfect for meal prep and makes a satisfying, wholesome lunch or dinner.
Steps
- Cook toor dal, masoor dal, and moong dal together until soft
- Add chopped spinach, dill leaves, onion, tomatoes, garlic, and green chilies to the cooked dal
- Add jeera, pepper, turmeric, and coriander powder to the dal mixture and cook until well combined
- Heat oil in a pan and add jeera, mustard seeds, chopped garlic, onion, and red chili for tempering
- Pour the tempering over the cooked dal and mix well
- For egg roast, heat oil in a pan and add chili powder, coriander powder, turmeric, pepper, and salt
- Add boiled and halved eggs to the spice mixture and coat well
- Serve spinach dal with egg roast, rice, and fresh salad
