High-Protein Spinach Dal with Egg Roast

Day 6 of the 30 Days Healthy & High-Protein Recipe Series brings you a nutritious and flavorful meal combining protein-rich lentils with eggs. This spinach dal with egg roast is perfect for meal prep and makes a satisfying, wholesome lunch or dinner.

Steps

  1. Cook toor dal, masoor dal, and moong dal together until soft
  2. Add chopped spinach, dill leaves, onion, tomatoes, garlic, and green chilies to the cooked dal
  3. Add jeera, pepper, turmeric, and coriander powder to the dal mixture and cook until well combined
  4. Heat oil in a pan and add jeera, mustard seeds, chopped garlic, onion, and red chili for tempering
  5. Pour the tempering over the cooked dal and mix well
  6. For egg roast, heat oil in a pan and add chili powder, coriander powder, turmeric, pepper, and salt
  7. Add boiled and halved eggs to the spice mixture and coat well
  8. Serve spinach dal with egg roast, rice, and fresh salad
