Mediterranean Chicken Bowl with Tzatziki
This Mediterranean chicken bowl is healthy, high-protein, and bursting with flavor—perfect for a satisfying lunch or dinner. Part of a 30-day healthy cooking series, it features marinated air-fried chicken, colorful sautéed vegetables, and a fresh homemade tzatziki sauce.
Steps
- Chop dill and parsley and set aside
- Cut chicken breast into small pieces
- In a bowl, combine chicken with 3 tbsp yogurt, paprika, garlic powder, ginger powder, sumac, cumin, onion powder, salt, lemon juice, chopped dill, parsley, and 1 tsp olive oil; mix well
- Transfer marinated chicken to air fryer and cook at 350°F for 20 minutes, flipping halfway through
- While chicken cooks, slice red onion, zucchini, red bell pepper, and green bell pepper
- Heat a little oil in a pan and sauté the vegetables for 3-4 minutes until tender
- Season sautéed vegetables with salt and pepper
- For tzatziki: combine 3 tbsp Greek yogurt, grated cucumber (squeeze out excess water if desired), grated ginger, chopped dill, salt, and pepper; mix well
- To assemble: place sautéed vegetables and rice on a plate, top with air-fried chicken
- Add a generous scoop of tzatziki sauce and sprinkle with extra dill
