Steps

  1. Peel and thinly slice the sweet potato
  2. Slice the onion thinly and halve the cherry tomatoes
  3. Beat the eggs in a bowl with salt and pepper
  4. Heat a pan over medium heat and add olive oil
  5. Add sweet potato slices in a single layer and cook for 2-3 minutes until golden and slightly crispy
  6. Sprinkle salt and pepper on the sweet potatoes
  7. Add sliced onions on top and let them soften and caramelize slightly
  8. Add fresh spinach and let it wilt
  9. Pour in the egg mixture and spread evenly
  10. Add cherry tomatoes on top
  11. Sprinkle cottage cheese or feta cheese over the eggs
  12. Drizzle with chili oil
  13. Cover with lid and cook on low heat for 3-4 minutes until eggs are set
