Vegetable Egg Fried Rice

This restaurant-style vegetable egg fried rice is loaded with fresh vegetables, scrambled eggs, and bold flavors from Schezwan and soy sauce. It's a quick and delicious meal perfect for busy weeknights or lunch boxes.

Steps

  1. Heat oil in a pan over medium-high heat
  2. Add chopped onion, carrots, bell pepper, ginger, and garlic to the pan, stirring between additions to prevent burning
  3. Add beans and mix well
  4. Add Schezwan sauce and soy sauce, stirring to combine
  5. Crack eggs into the pan and scramble until cooked through
  6. Add cooked rice to the pan and mix gently
  7. Add chili oil, sugar, and salt, mixing very well
  8. Sprinkle fresh spring onion and cilantro over the rice and mix thoroughly
