Cheesy Chicken Quesadilla
These homemade chicken quesadillas are packed with seasoned chicken, sautéed peppers, and plenty of gooey melted cheese. Lightly toasting the tortillas in oil first ensures they turn out tender and golden crisp.
Steps
- Heat a splash of oil in a pan over medium heat and sauté the sliced onions for a few minutes.
- Add the chicken and cook thoroughly until fully done.
- Add the sliced bell peppers and sauté until tender-crisp.
- Season with salt, garlic powder, ginger powder, paprika, chili powder, and cumin powder, then stir well.
- Stir in the taco sauce and a small handful of shredded cheese until melted and incorporated, then remove the filling from the heat.
- Lightly brush each tortilla with oil and warm briefly on both sides in a skillet until soft.
- Place one tortilla in the skillet, sprinkle with a layer of cheese, and spread the chicken and pepper filling on top.
- Add another layer of cheese over the filling and cap with a second tortilla.
- Cook until the bottom is golden brown, then flip and cook until the cheese is completely melted and both sides are golden and crisp.
